Pear, Almond and Mint Cake
►½ cup of quinta de jugais orange blossom honey
►3 pears in purée;
►1/3 cup of almond milk;
►1/3 cup of water;
►6 tablespoons of almond butter;
►2 tablespoons of chopped mint leaves;
►1 tablespoon lemon juice;
►1 cup of almond flour;
►1/3 cup of tapioca starch;
►1/3 cup of chickpea flour;
►1/3 cup of coconut sugar;
►½ of baking powder;
►½ teaspoon of bicarbonate;
►4 tablespoons of laminated almonds;
►2 ripe pears in purée (for the topping;
►2 tablespoons of almond butter (for the topping);
►1/3 cup of almond milk (for the topping)
►Pinch of salt;
1.Start by preheating the oven to 180º. Meanwhile grease and sprinkle a mold.
2.Mix all the liquid ingredients until the mixture is creamy and add the solid ingredients (except the laminated almond) and mix well.
3.Add the laminated almonds and mix. Put the dough in the pan and bake about 45 minutes. After it is cooked, remove it from the oven and let it cool for about 15 minutes in the pan before taking it out.
4.For the topping, bring the pear puree with the almond butter and milk to the heat and mix well. Allow to cool slightly and charge the cake.
