Carob Bread with Fig and Walnuts

Ingredients:
150g flour
175g oat flour
50g carob flour
1 tablespoon corn flour
1 teaspoon of baking soda
1 teaspoon of cinnamon
1/2 teaspoon salt
100ml molasses
2 keys. quark cheese
3/4 cup of milk
zest of 1 lemon
100g walnuts
100g of figs
Fig Jam with Walnut
Preparation
1. Start by preheating the oven to 170º. Then take the opportunity to line an English cake pan with parchment paper. In a bowl, mix the flour, salt, baking soda and cinnamon.
2. In another bowl, mix the quark cheese, milk and lemon zest and then add the molasses.
3. Little by little, add this mixture to the bowl with the flour mixture and mix very well. The dough ends up looking very thick. Add the figs and walnuts, previously coarsely chopped, and fold into the dough.
4. Place the dough in the pan without smoothing the top and bake for approximately 45min-1h (if necessary, do the toothpick test).
5. After the dough is cooked, unmold it and let it cool completely before slicing. Then just spread it with fig and walnut jam and enjoy.
