Ingredients:
200g of hazelnuts;
130g of butter;
230g quark cheese (for the cake);
220g spelt flour;
2 teaspoons of yeast;
4 eggs;
120g of golden syrup;
100g of brown sugar;
Zest of 1 lemon;
250ml of soy cream;
100ml quark cheese (for the topping);
Strawberries;
5 tablespoons of Strawberry and Mint Jam;
Preparation:
1. Preheat the oven to 180º. Then, place the hazelnuts in the oven for 5-7 minutes and after that time, remove them from the oven and remove the skins so you can crush them.
2. Mix the butter (softened), cheese, hazelnuts, eggs, golden syrup, sugar and lemon zest in the mixer, being careful not to beat too much.
3. Add the flour and yeast previously mixed into the mixture. Then place the mixture in two greased and lined baking tins and bake for 25-30 minutes.
4. Remove them from the oven and let them cool completely before cutting the tops. While the cakes are cooling, prepare the frosting by whipping the cream.
5. When they are well beaten, add the cheese and beat for a few more minutes. Add spoonfuls of strawberry jam to the mixture and mix.
6. Place one cake on a plate and cover with the cream. Place the other cake on top and add more cream. Finish with some strawberries on top and sprinkle with powdered sugar if desired.
