Pear, Almond and Mint Cake

Ingredients:
1/2 cup Quinta de Jugais orange tree honey
3 pears in puree
1/3 cup almond milk
1/3 cup of water
6 tablespoons of almond butter
2 tablespoons chopped mint leaves
1 tablespoon of lemon juice
1 cup almond flour
1/3 cup tapioca starch
1/3 cup chickpea flour
1/3 cup coconut sugar
1/2 teaspoon yeast
1/2 teaspoon of bicarbonate
4 tablespoons of sliced almonds
2 very ripe pears, pureed (for the topping)
2 tablespoons almond butter (for the topping)
1/3 cup almond milk (for topping)

Preparation
1. Start by preheating the oven to 180º. Meanwhile, grease and sprinkle a form.
2. Mix all liquid ingredients until the mixture is creamy and add the solid ingredients (except the sliced almonds) and mix well good.
3. Add the sliced almonds and mix. Place the dough in shape and bake for about 45 minutes. Once cooked, remove from the oven and leave Cool for about 15 minutes in the pan before taking it out.
4. For the topping, heat the pear puree with the butter. almond and milk and mix well. Let it cool a little and cover the cake.
