Ingredients:
4 egg yolks;
100 g of sugar;
2.5 dl of milk;
2.5 dl of cream;
chopped walnuts to taste;
1 pinch of cinnamon;
2 tablespoons of Fig and Walnut Jam;
Preparation
1. In a saucepan, bring the cream and milk to the boil. Meanwhile, beat the egg yolks with the sugar.
2. Combine the two preparations and bring to the boil, stirring constantly until the maximum temperature of 85°C is reached (use a thermometer) to prevent the yolks from starting to curdle.
3. Remove the mixture from the heat and strain it through a fine mesh strainer. Once the mixture has cooled, add the jam, nuts and cinnamon and place in the ice cream maker, following the instructions provided.
4. Serve the ice cream with fresh figs, crumble and nuts.
