Pumpkin Pancakes with Pumpkin and Almonds Jam
Ingredients:
►1/4 cup of pumpkin purée;
►1/4 cup of almond milk;
►1 tablespoon of lemon juice;
►1 tablespoon of coconut oil;
►2 tablespoons of Pumpkin Jam with Almond ;
►1 large egg;
►3/4 cups of almond flour;
►½ teaspoon of cinnamon;
►1/3 teaspoon of nutmeg;
►½ teaspoon of baking powder;
►Pumpkin Jam with Almonds;
►Almonds;
►Cinnamon;
Preparation:
1.On a bowl mix together all the liquid ingredients (save 1 teaspoon of the coconut oil).
2.On a different bowl mix the solid ingredients really well. When they are mix together, slowly add them to the liquid ingredients, without stop whipping.
3.Let the dough rest about 15 minutes or over the night.
4.Put the remaining coconut oil on a hot pan. Place some spoons of the dough on the pan and let it cook on both sides until it is golden-brown
5.Serve them with the Pumpkin Jam with Almond and add more toasted almonds and cinnamon on the top.
