Ice Cream with Fig and Walnuts Jam
►4 egg yolks;
►100 g of sugar;
►2,5 dl of milk;
►2,5 dl of sour cream;
►chopped Walnuts (as desired);
►1 pinch of cinnamon;
►2 tablespoons of Fig Jam with Walnuts;
1.On a pan, put the sour cream and the milk. Meanwhile, whisk the egg yolks with the sugar.
2.Place the two mixes together in the pan, and keep mixing until it gets to a maximum temperature of 85ºC (use a thermometer), avoiding that egg yolk starts to curd.
3.Take the mixture off the heat and pass it by a strainer. As soon the mixture start to cool down, add the fig jam, the walnuts and cinnamon and place it on the ice-cream machine, following its instructions.
4.Serve the ice-cream with fresh figs, crumble and chopped walnuts.
