Cheesecake with Natura Blueberry Jam
►200 gr of almond flour;
►80 gr unsalted vegetable butter;
►2 tablespoons brown sugar (for the crust);
►600 gr of cottage cheese;
►2 natural yogurts;
►1/4 cup brown sugar (for the filling);
►50 ml milk;
►2 tablespoons corn starch;
►1 teaspoon vanilla extract;
►150 gr of blueberry jam Natura Quinta de Jugais;
1.Preheat the oven to 180ºC. Put the almond flour and sugar in a bowl. Add the melted butter and wrap. Distribute this mixture in a circular shape (20cm diameter) tin, previously greased with spray.
2.Bake for 10 minutes. Remove from oven and cool to room temperature. Reduce the oven to 160 ° C while filling.
3.Put the curd and yoghurt together in a blender, mash them until a homogeneous mixture is obtained. Add eggs, sugar and milk, mixing again. Finally, add the corn starch and the vanilla extract, mixing until completely homogeneous.
4.Pour the filling over the crust. Bake for 50 to 60 minutes or until the cheesecake is ready.
5.Remove from the oven, allowing it to cool down to room temperature and then refrigerate overnight. Serve with blueberry jam and fresh blueberries.
